Steak sandwiches and Brussels sprouts

Another win for dinner. Steak cooked with just salt and pepper cooked in the cast iron and removed to sit. Brussels sprouts halved and sautéed in steak juices, condensed chicken broth and balsamic vinegar. Reduce and cook until soft. Plate the Brussels sprouts. Slice the steak and add to balsamic reduction for just a minute. Serve on croissant with shredded cheese an Dijon mustard. Yum!

Our new ride!

The trusty old Jetta has slowly been dying for good. Rory and I stopped by the Honda dealership to see what specials they had going on to start our research and we were made an offer we couldn't refuse and now have a brand-new, cute little civic! The pictures are of us moving belongings from old car to new car and celebrating with tacos! (on a side note: the new Doritos taco at taco bell is amazing)

Discovering UofR

Rory and I took the pups to explore the nearest college, University of Richmond. It has a reputation for being beautiful so we were excited to see it firsthand. We were pleasantly surprised to find rope courses, lakes, and trails so close to our new place.

Poppyseed chicken casserole

I tried a great recipe from pinterest last night that was so good even Hubby asked for seconds. And not just seconds! He wanted more of "that crunchy stuff".

Boil 2 chicken breasts and cube. Mix with 1 can cream of chicken, 1 bag frozen peas, 1 cup sour cream, and 1 teaspoon of Italian seasoning. Spread into a casserole dish.

In a separate bowl, mix half a sleeve of ritz crackers, a heaping spoonful of coconut oil, and a tablespoon of poppy seeds. Crush crackers and mix ingredients. Spread over chicken mixture. Bake for 30 minutes at 350. Serve over rice or pasta.

Window boxes

Today we decided to act upon the beautiful weather Virginia had decided to bring to us a little bit early. Our landlords had equipped the rental with window box hooks, but we needed to provide our own window boxes. In order to save money, hubby got handy and made some: he even suggested planting some of our wedding flower in the box! Here is our project for the day!
